The Traditional Cape Breton Cookie-The Oatcake Perfect Served With a Cup Of Tea

One of Cape Breton’s most traditional cookies is the oakcake.  I always tell by guests
that they don’t have to feel guilty about eating these cookies as oats are so good for
you. They are perfect with a cup of tea for a break during the day or a bed time snack.

CAPE BRETON OATCAKES
 1/2 cup butter
 1/2 cup shortening
 1/2 cup white sugar

Mix all the above together and then put about 3Tb spoons of boiling water in a cup
and add 1/2 tsp. soda to it and pour into the above mixture.  Beat well and add...
 1 1/2 cup flour
 1 1/2 cup rolled oats
 1/4 tsp. salt

Combine and roll out on a floured counter to the thickness you would prefer. Cut into
squares or circles and bake in a 375 oven for about 6 minutes or until they are golden brown.
